  • ¼ cup oil
  • 1 tsp crushed garlic (2-3 cloves)
  • 1 large onion, finely chopped
  • 1 tsp chilli powder (or to taste)
  • 1 cup crunchy peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp lemon juice
  • ½ cup Chelsea Dark Cane Sugar
  • 1 ½ cups coconut cream
  • Salt to taste
  • Pepper to taste

Method

Heat the oil in a saucepan. Add the garlic, onion and chilli powder and cook for 2 minutes over a medium heat.
Stir in the peanut butter, soy sauce, lemon juice and Chelsea Dark Cane Sugar.  Add the coconut cream, bring to the boil and season with salt and pepper to taste.
Serve over beef or chicken satays, barbecued meat or burgers.
