Fab recipe...have reduced sugar swapping out a quarter cup for an extra quarter of coconut...have also swapped out dairy milk to coconut milk...always delicious

Wow is all I can say - not a fan of coconut cake, made it for my husband.I didn't have almond essence so used vanilla & I added a teaspoon of baking powder.It was light, moist, just the right about of coconut & sweetness. Absolutely yum - have shared the link to family and friends - :-)

This is a brilliant recipe, my go-to when I need a cake in a hurry. It has never failed and is delicious. I use vanilla essence if I don't have almond, and I sprinkle icing sugar over the top when cool. Highly recommended!

Method
Melt the butter.
Mix all the other ingredients in basin and pour over the melted butter.
Beat really hard for 3 minutes with a hand beater or for the same time with an electric beater.
Bake in a moderate oven 190°C for 35 to 40 minutes.
