I agree with the need to add more syrup - will try this with jam as suggested by others next time. I used plain flour & baking powder, and added 1/2 cup of raisins for extra flavour & texture (any dried fruit could be used). I also added roughly 1/2 teaspoon of cinnamon. Not sure where/when the 2 drops of vanilla essence were meant to be added as this is not stated in the recipe. I didn't include this and it was fine. I am about to make this delish sounding pudd for dinner tonight and I'm already giving it 5/5 'cos it sounds so good
Lightly grease a 1 pint pudding bowl. Place syrup in the bottom of pudding basin.
Mix flour, sugar and butter together and then beat in the egg, water and milk until it resembles a thick batter like consistency.
Spoon mixture into pudding basin and cover with plastic wrap.
Cook in the microwave on high for 2 minutes. Take plastic wrap off and cook for a further 2 minutes and then leave to stand for 2 minutes before serving.
We put apples in and ice cream on top. VERY tasty 😋😋😋😋😋😋😋😋😋tasty
