Here's a super easy and quick recipe that should appeal to most. Submitted by one of our recipe club members.

Ingredients

  • 125g butter (or Olivani Spread)
  • 1 cup Chelsea Caster Sugar
  • 2 Tbsp honey
  • 1 cup flour
  • 1 tsp baking powder
  • 1 cup coconut
  • 1 egg
  • 1 cup of dried fruit of your choice (i.e. sultanas, apricots, peaches, cranberries etc.)
  • 1 cup rolled oats
  • 2 crushed weetbix
  • 1 cup chocolate buttons (white, dark etc)

Method

Preheat oven to 180 degrees. 

In a large bowl add all other ingredients together. Then add heated butter mixture and mix together until moist.

Press evenly into a large greased tin, (or use a square ceramic dish) and bake at 180 degrees for 15 minutes.
