Here's a super easy and quick recipe that should appeal to most. Submitted by one of our recipe club members.

Ingredients

  • 125g butter (or Olivani Spread)
  • 1 cup Chelsea Caster Sugar
  • 2 Tbsp honey
  • 1 cup flour
  • 1 tsp baking powder
  • 1 cup coconut
  • 1 egg
  • 1 cup of dried fruit of your choice (i.e. sultanas, apricots, peaches, cranberries etc.)
  • 1 cup rolled oats
  • 2 crushed weetbix
  • 1 cup chocolate buttons (white, dark etc)

Agree with some other reviews - the heat from melted butter (bearing in mind the sugar needs to dissolve) melted all of the chocolate chips. So pre-oven there was a lovely chocolate smell and the bar was fully chocolate coated... quite moist I think because of this. Cook for longer than 15mins (20+ mins). Method

Preheat oven to 180ºC bake. 

Melt butter, Chelsea Caster Sugar and honey in a saucepan over medium heat. Once sugar has dissolved, remove from heat.

Add all remaining ingredients to a large bowl. Add butter mixture and mix together until well combined.

Press evenly into a large greased tin (approximately 20cm x 30cm) and bake for 15 minutes.

Slice into bars while still warm. Store in an airtight container once cool.
