Quick and easy to make and tastes divine! 10 mins for simmering is enough in my experience.
Place raspberries and sugar in a medium saucepan over medium heat. Bring to a simmer. Continue to simmer, stirring occasionally, for about 15 minutes, until mixture thickens slightly.
Strain and press through a sieve or mouli. Stir in the lemon juice. Refrigerate for up to a week, or freeze in smaller batches.
