  • ¾ cup Chelsea Caster Sugar
  • 1 egg
  • 2 ½ Tbsp cocoa powder
  • 3 Tbsp red food colouring
  • ½ tsp vanilla essence
  • ½ cup buttermilk
  • 1 cup + 2 Tbsp standard flour
  • ½ tsp salt
  • ½ tsp baking soda
  • 1 ½ tsp white vinegar
  • 1 cup dark chocolate chips
  • dried raspberries, to decorate

Method

Preheat oven to 180°C bake. Line a 12-hole muffin tray with cupcake cases.

Cupcakes : Cream butter and Chelsea Caster Sugar at medium-high speed until light and fluffy.

Turn to high and add egg, scraping down edges to incorporate everything.

In another bowl, mix cocoa, food colouring and vanilla to make a paste.  Add to batter on medium until combined.

Turn to low and add half of the buttermilk and half of the flour. Mix until combined, scrape bowl and repeat with the other halves, then beat on low speed. Add salt, soda and vinegar, turn to high and beat until smooth. Stir in chocolate chips.

Divide between cupcake cases and bake for approximately 20 minutes, until cupcakes spring back when lightly pressed on top.

Leave in tin for 10 minutes, then remove and cool on a wire rack.

Cream Cheese Icing : Add butter and cream cheese in a bowl, and beat on high.

Add Chelsea Icing Sugar and vanilla and beat until light and fluffy. Pipe or spread onto cooled cupcakes and decorate with dried raspberries.
