Yes love Yo Yos and Chelsea icing sugar is smooth if you add a drop of milk to the custard creme filling it really makes the texture smooth.
Preheat oven to 180°C bake and line two oven trays with baking paper.
Beat butter and sugar until light and fluffy. Beat in vanilla essence. Sift in flour and custard powder and mix with a spoon or spatula to combine.
Roll heaped teaspoons of mixture into balls and place on prepared trays. Flatten slightly.
Bake for 15 minutes or until biscuits are a pale golden colour. Remove from oven and transfer to a wire rack to cool completely.
Filling
Beat all ingredients together until well combined and smooth. Add a dash of milk if mixture is too thick. Spread onto the base of half the biscuits, then sandwich together with remaining biscuits.
I’ve made these twice now and been a hit bth times! Will definitely be using this recipe again as a favourite. Only change i would make is I would double the recipe.
