Method

Place all the ingredients in a mixing bowl and gently stir together.

Taste and adjust as needed. Prefer it more sour? Add extra citric acid. Too bitter? Add more Chelsea Icing Sugar. Take care though - always add additional ingredients in small amounts and re-taste each time.

Sieve the sherbet to make it finer if needed.

Enjoy fresh sherbet! Can be eaten with a spoon, a straw, a lollipop, and even clean fingers.

Sherbet is best stored in a snap-lock bag or airtight container, away from moisture.
