Base

• 1 packet wine biscuits

Caramel

• 1 tin condensed milk

Topping

• 250g chocolate melts
• 1 tbsp oil

• 110g ( ¾ Cup) Plain Flour

• Bar of White Chocolate ( I used ¾ of a Whittakers Raspberry White Chocolate Bar)
• Frozen Raspberries (don't defrost)

• 1 x 455g can crushed pineapple in juice or syrup (2 cans if you want a richer filling)
• 3 Tbsp custard powder
• ¼ cup water

For the icing

Ginger Icing

• 120g butter
• 1 ¼ cups Chelsea Icing Sugar
• 3 Tbsp Chelsea Golden Syrup
• 5 tsp ground ginger

Shortcake pastry

• 125g butter
• ½ cup Chelsea White Sugar
• 1 egg
• 1 ½ cups flour
• 2 Tbsp cornflour
• 1 Tbsp custard powder
• 1 tsp baking powder

Filling

• 500g (approx. 2 cups) lightly stewed apple, (without extra water) or canned apple pie filling
• 1 tsp mixed spice
• ¼ cup Chelsea White Sugar (or sugar to taste)

• Chelsea Icing Sugar to dust

• ⅔ cup almonds or almond meal
• ⅔ cup rolled oats
• ⅓ cup shredded coconut
• 2 Tbs white chia seeds
• pinch sea salt
• ⅓ cup Chelsea Golden Syrup
• 2 tsp vanilla extract
• 1-2 tablespoons water
• 1 cup shredded coconut, extra, for rolling
