Sultana and Orange Jelly Loaf

Ingredients

    2 cups boiling water
    1 packet jelly orange (or lemon) flavour
    1/2 cup Chelsea White Sugar
    60 g butter
    2 teaspoons baking soda
    375g sultanas
    3 cups plain flour
    3 teaspoons baking powder
    1/2 cup chopped walnuts (optional)

Method

    Combine water, jelly crystals and Chelsea White Sugar in a large bowl. Stir to dissolve. Add the butter, baking soda and sultanas. Stir to mix well, cover and leave overnight or at least 8 hours.

    Next morning add the rest of the ingredients. Mix well, and pour into one large well-greased and baking-paper-lined loaf tin. Bake for 1 ¼ hours at 180°C. Cool on a wire rack.

    Slice and serve buttered if desired.

Great recipe especially given it doesn’t need eggs and the jelly and fruit make up the sugar. Also Have found any flavoured jelly works and I don’t bother waiting 8 hours.
