Alice's Chocolate Cake with Ganache

    175gm butter
    1tsp vanilla extract
    1 3/4 cup Chelsea White Sugar
    3 eggs
    1/2c cocoa
    2 c plain flour
    1 1/2 tsp baking powder
    3/4c milk
    100gm dark chocolate
    250ml cream
    250gm dark chocolate melts


    Cream butter, vanilla and Chelsea Caster Sugar. Add eggs one at a time. Sift cocoa, flour and baking powder. Heat milk and chocolate together until chocolate has melted.
    Fold in flour then stir in milk mix a little at a time.
    Grease and line tin or tins and bake at 190*c for 20-25 min.
    Once cool split cake in two and fill with ganache.
    To make ganache, bring cream to a simmer and add dark chocolate melts. Stir till combined and then cool in fridge until cold. Beat with a wooden spoon until slightly thickened.
