Celebration Chocolate Cake with Berry Icing

100g dark chocolate
100g Tararua Butter
2 eggs
50g Chelsea Raw Caster Sugar
20g Edmonds Self Raising Flour
Preheat the oven to 180°C. Grease 3 ramekins with a little melted Tararua Butter.
Melt the dark chocolate and Tararua Butter using either the microwave or a bain-marie. In a large bowl, use an electric mixer to beat the eggs and Chelsea Raw Caster Sugar until the mixture turns pale and frothy.
Pour the melted chocolate into the egg mixture. Stir in the Edmonds Self Raising Four using a spatula to mix everything evenly.
Fill the ramekins ¾ full with the cake mix and bake in the oven for 10-12 minutes. The cake is deliberately under-cooked to achieve the runny, lava centre, but if overcooked makes a delicious cake anyway.
Once out the oven, let cool for 1-2 minutes and then use a spoon to loosen the edges. Tip each cake upside-down onto a plate and tap lightly on the bottom of the ramekin - the cake should fall out onto the plate. Eat straight away with ice cream!
After a few tries the recipe still came out too eggy. I decided to try just use one egg and it worked a treat! Highly suggest if you are having trouble like I was.
Tried it out for the first time today, and was disappointed. I don't know what I did wrong but the texture was like a pudding. It tasted eggy/fluffy like a marshmallow. It smelt nice but other than that it was horrible. Looking at all the other reviews I'm guessing that I did something wrong. I wasted so much money because I was planning on making it for 8 people, major let down.
These took too long to cook, well over half an hour, I ended up giving up, disappointing. The batter tasted great though! Wish they'd have worked true to recipie
I had to make something for Food Technology Class so my friend recommended this. I am not the best at making food but as long as you follow the steps it'll work. It is really AMAZING and EASY to make. Thank you CHELSEA. Enjoy the meal if you make it :)

It was absolutely delicious! I loved it and will make it again and again, it's so easy, quick, and is the perfect thing to make for a chocolate craving. The lava is smooth, rich and just amazing!
I tripled the recipe. Beat the eggs until really thick, this takes a while (10 minutes), then beat chocolate into the mixture, folded flour for one minute until no white traces. Then put into small cups. Cooked for the twelve minutes. I used 90% chocolate (Lindt). This was exquisitely decadent. The shell was perfect and ran like a river when cut.

This lava cake is amazinggg :) my first time making it & I'm so glad I picked this recipe lol. It's super simple & tastes gorgeous.
I read the reviews and noted the lady who did a double batch and also had to cook mine around the 17min mark. I made mine in a large muffin tin that cooks 6 at a time - it worked fine :)
The review that said it didn't turn out as lava cake most likely overcooked it. I kept an eye on mine to ensure the top was cooked enough to hold the lava & that I didn't cook it right through.
My son in law set me a challenge to make lava cake. I like to keep things simple so when I saw this recipe and how easy it looked, I made it! It turned out great,my family loved it! I will make more! Thank you for giving me confidence to try this awesome easy recipe!
I just made this. I tripled the mixture (2 x parts dark chocolate and 1 x part milk chocolate as we prefer it not so rich) and it made 8 (should have been 9) but think my ramekins are a bit bigger than standard ones. After 10-12 minutes was still too soft to touch on top. I had to cook it for 17 minutes in total and was perfect! My nephew, who requested the cakes for his birthday, was very happy. Dished it with ice-cream to finish it off . . . recommend you give it a try.
It didn't turn out as a lava cake as such! I was quite disappointed. Will never make this again!
CHELSEA: Hi there, if you didn't get the runny, lava centre the cakes probably needed to be cooked for a few minutes less.
cant wait to make this lava cake as I have not made one in my entire life :) hopefully it turns out as good as it sounds
Just made this after watching MKR, have to be honest, mine looked more 'lava' than the MKR contestants - I gave myself a 10/10
