  • 150g butter, softened
  • 1 cup Chelsea Caster Sugar
  • 2 eggs
  • 1 tsp vanilla essence
  • 2 ½ cups plain flour
  • ¾ tsp baking powder

To Decorate

  • 1 cup Chelsea Icing Sugar
  • 2 Tbsp milk (or water), approximately
  • 24 white marshmallows
  • 4 orange-coloured liquorice allsorts
  • Black writing icing pen
  • 4 strips red liquorice
  • 2 Tbsp dried cranberries

Method
Pre-heat oven to 160°C bake. Line two baking trays with baking paper.
Beat butter and Chelsea Caster Sugar until fluffy and pale then beat in eggs one at a time. Beat in vanilla. Stir in flour and baking powder and mix until a soft dough forms. Cover with plastic wrap and chill for at least 30 minutes.
Roll out dough between sheets of baking paper and cut 24 circles out with a cookie cutter, or roll dough into a long sausage shape, cut into sections and make into free-form rings. Irregular shapes look just as cute!
Transfer to baking trays and bake for 10-12 minutes until pale golden. Allow to cool completely before icing.
To Decorate : Mix Chelsea Icing Sugar with a little milk or water until it is a thick but runny consistency. Drizzle or spread over the biscuits and press a marshmallow at the top of each biscuit.
Cut small triangles for noses out of the orange part of the liquorice allsorts and attach to the side of the marshmallow with a little icing. Cut the red liquorice into thin strips and wrap around the base of the marshmallows to form scarves. Cut each cranberry up into 4 pieces and use these as buttons. Draw on the eyes, mouth and arms with the icing pen. Leave to set.
TIP: Package up in cellophane and tie with a ribbon to gift.
