White Chocolate Cranberry Blondie

    150g unsalted butter
    2 cup Chelsea Soft Brown Sugar, packed
    2 eggs
    2 tsp vanilla extract
    2 cups flour
    1½ tsp baking powder
    ¼ tsp salt
    ½ cup dried cranberries
    ¾ cup white chocolate, finely chopped


    1. Preheat oven to 180°C (fan-forced 160°C). Lightly grease and line a 27 x 18cm lamington baking tray with baking paper.

    2. Place the butter and Chelsea Soft Brown Sugar in a large mixing bowl and beat together until light and fluffy. Mix in the eggs and vanilla.

    3. In a separate bowl, combine the flour, baking powder and salt. Whisk to combine. Add the dry ingredients to the wet ingredients along with the cranberries and chocolate. Combine well.

    4. Place dough in prepared tray and press to create an even layer.

    5. Bake for 30 minutes or until golden brown.
