Raw Sugar
A lighter banana bread made with cottage cheese for a boost of protein. Soft, moist and dotted with juicy blueberries, it’s a feel-good twist on a classic.
Loaf keeps well in an airtight container at room temperature for up to 3 days. Best toasted or warmed after the first day. Can also be sliced and frozen.
Preheat oven to 160°C fan bake. Grease a loaf tin (approximately 13cm x 22cm) and line with baking paper.
Blend cottage cheese until smooth. In a large bowl, mash bananas well. Stir in cottage cheese, Chelsea Raw Sugar, eggs, oil, vanilla essence and lemon zest.
Add flours, baking powder, baking soda and salt. Mix until just combined.
Toss blueberries with the flour and fold into the mixture. Pour into prepared tin. Draw a line down the centre with a sharp knife (this helps the loaf to rise evenly).
Bake for 60-70 minutes, or until loaf is golden brown, springs back when gently pressed and a skewer inserted into the centre comes out clean. Leave to cool in tin for 15 minutes before transferring to a wire cooling rack.
Allow to cool before slicing and serving.
