  • 2 eggs
  • 1 cup Chelsea White Sugar
  • 1 teaspoon vanilla essence
  • 1 teaspoon baking powder
  • 1 teaspoon baking Soda
  • ⅔ cup vegetable oil
  • ½ teaspoon salt
  • 1 cup grated carrot
  • ½ cup crushed pineapple
  • 1 teaspoon ground cinnamon
  • Optional sultanas or raisins

Method

Sift dry ingredients into a bowl. Beat together eggs, vanilla essence and oil. Add to flour mixture. Add carrots, sultanas, pineapple and juice, mix well.
Fill greased muffin cups and bake at 200°C for 20 minutes.
Makes 12 large muffins.
