I read the reviews and noted the lady who did a double batch and also had to cook mine around the 17min mark. I made mine in a large muffin tin that cooks 6 at a time - it worked fine :) The review that said it didn't turn out as lava cake most likely overcooked it. I kept an eye on mine to ensure the top was cooked enough to hold the lava & that I didn't cook it right through., approved=true, user_name=Lani, hs_createdate=1730166383445, rating_new__1_5_=5, id=18999673162}, {comment_text=I tried this recipe. Thank you Chelsea x, approved=true, user_name=VickiAnn, hs_createdate=1730166284023, rating_new__1_5_=5, id=18999673160}, {comment_text=I just made this. I tripled the mixture (2 x parts dark chocolate and 1 x part milk chocolate as we prefer it not so rich) and it made 8 (should have been 9) but think my ramekins are a bit bigger than standard ones. After 10-12 minutes was still too soft to touch on top. I had to cook it for 17 minutes in total and was perfect! My nephew, who requested the cakes for his birthday, was very happy. Dished it with ice-cream to finish it off . . . recommend you give it a try., approved=true, user_name=cheryl cockill, hs_createdate=1730166160815, rating_new__1_5_=5, id=18999610955}, {comment_text=It didn't turn out as a lava cake as such! I was quite disappointed. Will never make this again! CHELSEA: Hi there, if you didn't get the runny, lava centre the cakes probably needed to be cooked for a few minutes less., approved=true, user_name=Lucy, hs_createdate=1730166118285, rating_new__1_5_=1, id=18999610952}, {comment_text=I think it is amazing and it tastes yummy i would recomend this recipe for you, approved=true, user_name=Carys, hs_createdate=1730166082174, rating_new__1_5_=5, id=18999610949}, {comment_text=cant wait to make this lava cake as I have not made one in my entire life :) hopefully it turns out as good as it sounds, approved=true, user_name=chocolate lover, hs_createdate=1730166044191, rating_new__1_5_=5, id=18999610940}, {comment_text=quick, super easy and totally delicious!!, approved=true, user_name=RachelB, hs_createdate=1730166011826, rating_new__1_5_=5, id=18999673142}, {comment_text=i've never made a lava cake, can't wait to get started, approved=true, user_name=cake, hs_createdate=1730165976623, rating_new__1_5_=5, id=18999673139}]}

Method

Preheat oven to 180°C bake. Grease 3 x 7-8cm round ramekins with a little butter.

Melt the butter and chocolate together using either a microwave (on a low power setting) or a bain-marie.

In a large bowl, use an electric mixer to beat the eggs and sugar together until pale and frothy.

Pour the melted chocolate into the egg mixture. Add flour and use a spatula to mix until combined.

Fill the ramekins approximately two thirds to three quarters full with the cake mix and bake in the oven for 12-15 minutes. The cake should still be a little wobbly on top (it is deliberately under-cooked to achieve the runny, lava centre).

Leave to cool for 1-2 minutes, then use a butter knife to loosen the edges. Tip each cake upside-down onto a plate and tap lightly on the bottom of the ramekin - the cake should fall out onto the plate.

Dust with cocoa powder, if desired, top with a scoop of ice cream and devour immediately!
