  • 1¾ cup (all purpose) flour
  • 1½ tsp baking powder
  • ½ tsp salt
  • ½ tsp nutmeg
  • ¼ tsp cinnamon
  • ¾ cup Chelsea White Sugar
  • ⅓ cup vegetable or canola oil
  • 1 egg
  • ¾ cup milk

For topping

  • ½ cup melted butter
  • ¼ cup Chelsea White Sugar
  • ¼ tsp cinnamon

Method

Preheat 175°C, Grease a muffin tray.
Combine the dry ingredients. : Mix the liquids in a separate bowl.
Add the liquids to the dry ingredients and combine together well, without over beating.
Spoon mixture into prepared muffin tins.
Bake at 175°C for 20-25 minutes.
While muffins are baking, prepare the sugar and cinnamon topping. Melt the butter. Mix together the cinnamon & sugar.
While muffins are hot, dip into melted butter and roll into sugar & cinnamon mixture.
