There are many great uses for this delicious fig jam! Enjoy it on toast, add to a cheese platter, spoon onto pancakes or even swirl through muffin or cake mixtures before baking.

Did this in microwave. Worked well. Cut down sugar and used brandy essence. Tasted great.
Chop figs into 1-2cm pieces and place in large heavy-based saucepan with lemon juice and brandy. Simmer gently until figs are soft (about 20 minutes).
Stir in Chelsea White Sugar. Once dissolved, bring mixture to the boil and cook, stirring occasionally, until the jam has noticeably thickened and the setting point is reached (this usually takes at least 30 minutes). You can test for set by placing a small amount of jam on a cold saucer - the surface should wrinkle when a spoon is pushed through it.
Pour into warm, dry, sterilised jars and seal. Set aside to cool, then label, date and store in a cool dark place.
Refrigerate after opening. Makes approximately 4 large jars.
