The secret to adding the chocolate is to only just melt it so it's just warm & have the cheeses not too cold. That way the blending is.more successful. I use frozen raspberries for the filling & fresh for the top. I swapped out raspberries for Delmaine Caramel sauce on the top for my daughters birthday, went down a treat! Had no problem with adding the melted white chocolate, although I did add it slowly bit by bit, and yes the chocolate sets in little hard lumps in the mixture as it sets when it hits the cold but they are just little flavor gems so all good.
