Sugared Nuts

4 cups nuts (can use any mixture for example: raw almonds, roasted peanuts, roasted mixed almonds, cashews, pecans etc)
1 cup water
1 cup Chelsea White Sugar
1 tsp vanilla extract
Finely ground salt
In a large frying plan, over low heat, add the water, sugar and vanilla. Stir until the sugar is completely dissolved.
Increase the heat to medium and add the nuts. Simmer for 10 minutes, or until the syrup begins to caramelize, stirring occasionally.
Using a slotted spoon, scoop the nuts out of the syrup and onto a foil-lined baking sheet and spread into a single layer (breaking up any clumps of nuts with the spoon). Be sure not to touch the nuts at this point, as they are very hot. Sprinkle with salt and allow the nuts to cool completely.
This took much longer than 10 minutes to cook down to caramelise .But they are very tasty and it's easy to divide them once they are cold.
