Microwave Brownie

3 Tbsp Chelsea Golden Syrup
120g self raising flour
60g butter
60g Chelsea Caster Sugar
1 egg
2 Tbsp water
4 Tbsp milk
2 drops vanilla essence
Lightly grease a 1 pint pudding bowl. Place syrup in the bottom of pudding basin.
Mix flour, sugar and butter together and then beat in the egg, water and milk until it resembles a thick batter like consistency.
Spoon mixture into pudding basin and cover with plastic wrap.
Cook in the microwave on high for 2 minutes. Take plastic wrap off and cook for a further 2 minutes and then leave to stand for 2 minutes before serving.
This was fabulous. Served 2 of us with lots left over. Added more golden syrup on top plus a scoop of ice cream and a bit of cream…….
I was very impressed! So simple yet so delicious. Perfect fix for those late night sugar cravings. Very light and fluffy sponge, golden syrup could definitely be swapped for any sweet sauce/jam and it would still taste great.
Absolutely fantastic, so easy and tasted just like mums homemade steamed jam sponge which took hours to make !!
One of the best and easiest to make. I have made lots of microwave puddings. I only had plain flour but added 1.5tsp of baking powder used jam came out absolutely fine.
Lovely light sponge pudding I used blackcurrent jam instead of syrup, so fast and easy to make we had it for afternoon tea, yummy.
Easy microwave pudding: On a typical freezing spring May day during lock down, I was looking for something quick and hot for sweet at lunch time to warm everyone up. This recipe took minutes to make and worked really well. My microwave is a 1900 watts and the inner sponge came out a nice texture after the recommended time. Syrup yummy! Served with custard. Went down really well with the troops.
I melt the butter to make this even easier to mix up and I double or triple the golden syrup to pander to my husband's sweet tooth. Fantastic recipe.
Makes a nice light sponge pudding, quick and easy! Lovely with dollop of cream. Definitely a keeper.
