1 kg strawberries, hulled
6 cups Chelsea White Sugar
1 1/2 tsp tartaric acid
Put strawberries into a preserving pan. Crush lightly with a potato masher or fork. Add Chelsea Sugar and stir thoroughly. Bring to the boil and boil 5 minutes. Add tartaric acid and boil rapidly for a further 5 minutes. Pour into sterilised jars.
