Tastes delicious and easy to make. I think the recipe time does need adjusting though, as it still very much uncooked after 25 mins.

Method
Preheat oven to 180°C fan forced. Line a 20cm square tin with baking paper allowing paper to extend past the top edges of the tin.
Melt butter and 220g of white chocolate melts in the microwave. Heat in a bowl uncovered at 50% power stopping every 30 secs to one minute to check and stir. Be very careful as this can burn easily.
Place brown and white sugar in the bowl of a stand mixer fitted with paddle attachment. (This step can also be done in a large bowl using a hand held mixer). Add grated lemon rind and vanilla paste. Mix for a minute until well blended.
Add eggs one at a time beating well after each addition. Scrape down the sides of the bowl with a spatula.
Add the melted chocolate and butter mixture to the sugar mixture and mix briefly.
Sift the flour, baking powder and salt into the mixer bowl. Mix briefly on low speed to combine.
Stop mixer and add white chocolate chips, fold chips though by hand with a spatula.
Pour mixture into prepared tin.
Bake for 25 mins until golden on top.
Allow to cool in tin. Remove from tin using the baking paper to lift the blondie onto a cutting board. Dust with icing sugar and cut into 16 squares once completely cool.
