Serves

2 eggs
1 cup Chelsea White Sugar (225g)
1 cup Edmonds Standard Grade Flour (150g)
6 Tbsp cocoa powder
2 tsp Edmonds Baking Powder
1/2 tsp salt
2/3 cup Meadow Fresh Original Milk (160ml)
165g Tararua Butter, melted
1 tsp vanilla essence
2/3 cup chocolate chips (130g), tossed with 1 Tbsp Edmonds Standard Grade Flour (optional)
Preheat oven to 180°C bake. Grease or line 6 extra large muffin tins or 12-15 medium muffin tins.
Beat the eggs and Chelsea White Sugar together.
In a separate bowl, combine the flour, cocoa powder, baking powder and salt. Add to egg/sugar mixture. Stir to just combine.
Add the milk, butter and vanilla essence. Fold in until just combined. Fold in the flour-coated chocolate chips, if using.
Spoon mixture into prepared tins, until approximately two thirds full.
Bake for 18-20 minutes (regular muffins) or 30 minutes (extra large muffins), until muffins spring back when lightly pressed or a skewer inserted into the centre comes out clean.
Leave to cool in tins for 10 minutes before transferring to a wire cooling rack. Delicious served warm!
Note that the muffin mixture is quite runny, and the resulting muffins have a fairly light, cupcake-like texture. The chocolate chips are coated in flour to help distribute them evenly throughout the mixture; however, you may find that a few still sink to the bottom during baking.
They taste great but the batter is not thick enough for the chocolate chips. My chocolate chips all sunk to the bottom & stuck the muffins to my tray. They also didn’t rise into a nice muffin shape. If I do it again I’ll use less liquid
Very easy and very tasty but I don't understand the other person's comment about pineapple makes you go crazy. There's no pineapple in these muffins
This recipe was amazing!!!!!!!!!!!! The texture and the taste worked perfectly together!! SO GOOD!!!
Hi,
I'm a kid home sick, (very bored) I enjoy baking and cooking. Asked mum if I could bake something and I thought I could make some Cup - Cakes, half way through making them I thought I had done it wrong but they have turned out great. EXCITED TO EAT THEM!
These muffins were super moist and delicious they don’t make very many and I didn’t add in the required amount of chocolate chips and three tasted fine.
dont understand a lot of the negative comments here, if your mix is too wet or your choccy chips are sinking you havent mixed it enough
this recipe is consistent and everytime ive made it theyve been superb
It doesn’t take 20 minutes it takes more 30 because it’s kinda runny and I added white choc but they are really good
These cupcakes turned out to be amazingly delicious. The kids loved them! Seems like an odd recipe but it worked really well.
I swapped out for GF flour, soy milk and dairy free spread instead of butter, still came out great. Thank you for sharing this recipe.
I mixture was running but I followed it and was delighted with the results! Everybody adding more flour, what are you doing!!! Just feel to fear and follow the recipe lol!!! Great muffins
I found these really good, although I ended up not using all the milk because I thought the batter was very thin. In glad I made the change, they turned out perfect.
My go to recipe easy mix and nice texture, flavour. Have made many times and been complimented by others, so thank you Chelsea Recipes.
I noticed there were quite a few bad reviews so I nearly didn't make this recipe. However, I've always found Chelsea recipes good so I gave it a go. And so glad I did! They turned out really well - despite me making a mistake and adding only 1tsp of baking powder! Despite that error, they were sooo good (but a little flat haha). The batter is very runny but they do bake well. I have to control myself not to make another batch just yet! I did not have chocolate chips but I added a square of whittakers in the middle.
The best chocolate muffins ever. I make 12 and they are gone within 2 hours sometimes not iced. My kids favourites
Delicious recipe!!! The only difference I did was chop up some white choc (medium chunks) which I then sprinkled over the top when cooking! The choc stated perfectly near the top. Fave muffins.
Didn’t rise, but taste amazing! Might try checking/adjusting butter next time. (Used 165g but didn’t measure after melting).
These are delicious! So moist and chocolatey. Definitely the best chocolate chip muffin recipe I've used! Can't wait to make these going forward for others to enjoy
Though they taste nice, the muffins came out flat and I would agree that the ratio of ingredients seemed off.
These muffins are incredible! I don’t see understand all the bad reviews, I’ve made them four times now and they consistently turn out amazing. They’re known as ‘those yum muffins’ in my house now.
This is a recipe I will use when my family would like something sweet and they say that it is amazing. Thank you Chelsea I appreciate your recipe
Not impressed - cupcakes not muffins - baking time varies - they didnt rise well - will be going back to my own choc muffin recipe ..
An easy and tasty recipe but ALL of the chocolate dropped to the bottom and then stuck to my trays! They're decent trays that I had generously oiled but they bottom of every muffin has come off with very little chocolate left. Might try with cases next time.
Highly recommend this recipe. Works every time. I am using 1/2 the amount of butter suggested though
These do not look like the picture...in fact very flat on the top!
Disappointed as usually have great success with Chelsea website recipes
THE BEST MUFFINS EVER the mixture is a bit runny but it doesn't matter: just keep going! So glad I found this recipe
Delicious! This will be my go-to now for kids lunch boxes. Agree with chocolate chips mixed with flour will prevent them sinking.
A great base recipe to work off of. I took this and modified it to my tastes and they turned out amazing. My version is pretty close, with some changes in measurements and ingredients.
150g of melted butter
2 eggs
3/4 cup of Chelsea White Sugar
1/2 cup of cocoa
100g of melted dark chocolate (optional)
1tsp vanilla essence
160g of yogurt
1cup (150g) Edmonds Standard Grade Flour
1tsp Edmonds Baking Powder
1tsp Edmonds Baking Soda
120g chocolate chips (optional)
Mix all wet ingredients, cocoa, chocolate chips (optional) and melted chocolate (optional) together thoroughly first before adding the flour, baking powder, and baking soda last.
Still use the 12-15min bake time as a guide for small muffins.
Small muffins took between 15 to 17 minutes at 180 degrees (bake setting) in my oven. Adjust accordingly to fit your oven's heat.
Tried making this recipe turned out very runny so added more flour but the end result was disappointing as there was no taste or rise. Measurements were off
Extremely confused by the recipe on this one. Why does it say 1 cup (110ml) for the sugar and also 1 cup (220ml) for the flour? Surely those aren’t both 1 cup? I ended up halving the sugar, putting slightly less milk and butter in (150g is ALOT) and added more baking powder and flour. The wetness of this means it’s over mixed and they didn’t rise. Only positive was the taste.
CHELSEA SUGAR: Hi there, the recipe specifies 1 cup (225g) of white sugar and 1 cup (150g) of flour. While the volume of each of these ingredients is the same, they are different weights due their different densities. The recipe is correct as written.
This recipe made fifteen muffins for us! The inside was cooked consistently, they all had small even- sized domes and were deliciously sweet! An excellent recipe and a new favourite of ours - many thanks!
Big fan. Made these into 24 mini muffins for our kids lunchboxes, a hit all round - even hubby nabbed a few.
Question:
Is the oven set to conventional
thank you
CHELSEA: Hi there, yes it's 180°C regular bake / conventional.
These turned out great! I substituted the sugar for Natvia to make them sugar free, and they came out so light and fluffy! Rather than fold the butter in I just added wet to dry and mixed it all with the electric beater.
Very happy with the recipe, easy to make, few ingredients and tasty.
It was good but didn't rise and butter is at the bottom and didn't like that but other then that it was really good! I would use this recipe again and try make it better.
I wont be using this recipe again, cakes didn't rise and chocolate drops all on the bottom not very good. I should have stuck to my original one.
Lovely flavour but would have baked them at 200C and reduced the cooking time as some of them sank in the middle.
If you mix the chocolate chips in with the flour mixture they won't sink to the bottom of the cupcake.
I used up the rest of some coconut cream instead of milk and they were beautiful and soft and fluffy and my chocolate chips were all through the muffins.
I like to double this mixture for my cakes and decided to use it as a cupcake instead today, definitely not runny. Using this recipe for my son's birthday.
These were amazing, I would make them again. The mixture was a bit runny so I put more flour in and voila they were delish!!
Great muffins only took me 15mins to make and around 25mins to cook them i reccomed doing about 120grams instead of 150grams and i put about 1tsp of caramel sauce in mine so its choc caramel muffins overall they are fun fantastic and easy to make definitly reccomend making them
Instead of 2/3 cups of flour I used 1/2 cup and i also used 120mL of milk and the mixture turned out perfect! The muffins were very moist and delicious. with these tweaks, the muffins are amazing :-)
Mixture is far too runny. The taste is nice and they turned out moist, but stuck to the muffin case and too much butter. I wouldn’t use this recipe again.
Main issue with these muffins as with the other reviews is that there is not enough flour, making for a runny mixture and then falling apart once baked.
Easy to follow had to substitute milk as mine was off but it still worked nice and moist, would have been better with milk i think but still good none the less...i used different chocolates left over, some did go to the bottom but not all. Will make these again.
Nice taste but the cooking time is too long - may just be my oven though. Make sure you keep a close eye while it's baking.
I made them as mini muffins and topped with popping candy. A bit bold, but it payed off. DELICIOUS!!!! ;)
This recipe was excellent.
The mixture seemed very runny, but the muffins turned out perfectly. Cook time of 20 minutes was spot on for a batch of 12.
10/10 - would make again.
Easy recipe to follow and very tasty too , not sure why everyone says it's too runny they still baked up fine
This recipe is amazing..I made cupcakes for the first time and they turned out to be perfect...do try this recipe for sure,
AMAZING. Came out perfect, with only little cracks in the top. Once cooled it was very soft and tasty. Put some whipped cream to add more flavour, my goodness I was pleasantly surprised. Well done.
Was an O.k recipe. Was very runny and needed more flour. Additional to about 0.5-3/4C more flour I added salt. Not a very cost effective recipe but I will try using oil next time.
Great recipe! I didn't add the chocolate chips, but instead put a small bit of strawberry jam in the middle of each one. They were really tasty and nice texture.
Since I try to go GF. I made a little change to this recipe.
I used
2 eggs
3/4 cup Coconut sugar and maple syrup mix
1 cup GF flour ( I used Namaste perfect flour blend)
7 Tbsp cocoa powder
2 tsp baking powder
1 tsp vanilla extract
2/3 cup coconut oil
1TBSP apple cider vinegar (To enhance the chocolate flavor. you could also use Espresso)
bake at 350 for 20-25minutes
This turned out such moist and fluffy muffins ever and has good amount of chocolate flavor. my whole family loved it!!!
Fabulous. Moist. Easy. Yummy. I missed out choc chips and put in a blob of caramel. I creamed egg and sugar till thick and light and the mixture was perfect.
Very simple and easy to make. I substituted the butter for oil and used a little less milk. They turned out light and fluffy and just as yum!
I made these with my kids a couple of times. The first time the choc chips did sink to the bottom so the second time we didn't put them in the mixture but scattered white and dark choc chips on the top and that worked a treat! They looked extra good with the white choc on top as well!!
Fantastic recipe! Have used this exact recipe around 50 times in the last month and a bit (yes I love to bake just a little too much sometimes) I love how the top goes a little crunchy (plus it depends on how long they cook for to how crunchy on the top they are) I don't always add chocolate chips or just make plain chocolate, I do a lot of mixed berry ones too. My family, friends and even my younger brothers high school friends love my mixed berry chocolate muffins - very popular among everyone I know. 100/10, definitely recommend this muffin recipe to others. Also I find the mixture runny at times but occasionally I'll beat the mixture once the milk and butter has been added for about 10 seconds and it just dose the mixture justice, then I finish folding the mixture with a wooden spoon and into the muffin trays they go!!
Easy to make and yummy to eat. I don't know how people can get this recipe wrong or say they're bad.
Not quite muffins, more like cupcakes as the recipe was slightly runny (plus I used an electric beater), but with a little more flour they made nice fluffy cupcakes which were really nice!
Loved these muffins. Some may not like the crunchy outside and gooey inside but I loved them. Really chocolatey and rich and plus they are really easy to whip up. My holy grail muffins.
The mix was way too runny, I had to add more flour. The mixture also tasted too buttery. Only after I had looked at other websites and put the muffins in the oven I realized this recipe was missing salt...
My 5 year old was able to produce a very nice batch of muffins with only minimal assistance. I'm very happy with how easy and tasty they were.
this recipe was a dud for me. Mixture was liquidy and also they never really baked properly. Did not rise and the outside was crunchy. Just tried this based on what i had in my cupboard at the time. Will do a shop and stick to my usual recipe from now on.
Make these weekly for my kiddos for school lunches but cut sugar in half . Very yummy and easy to make even my 8 year old made a batch :)
Wayyyy too liquidy, had to add more flour, also took 15 minutes and the outside was really crunchy? Due to same amount of sugar to flour I'm guessing :(
yummy recipe you can make chocolate muffins without chocolate chips with!! and of course being able to make them with white sugar is good when you dont have brown!! :D thanks for sharing the recipe.
The recipe was too buttery and didn't rise at all.
Also the formatting of the ingredients list is not clear and hard to follow.
Good recipe with ingredients I have in my house all the time. I used 100gms butter and just mixed the wet ingreds with the dry ingreds and was very happy with the result.
