  • 100g almond meal
  • 1 cup wholemeal self-raising flour
  • ½ cup Chelsea LoGiCane™ Low GI Sugar
  • 2 x 50g eggs
  • ⅓ cup skim milk
  • 140g tub unsweetened apple puree
  • 1 tsp vanilla extract or essence
  • 1 ½ cups fresh or defrosted frozen mixed berries

Method
Preheat oven to 170 C (fan-forced). Spray 12 x 125ml (1/2 cup) friand pans with cooking spray.
Put the almond meal, flour and sugar in a medium bowl. Stir well. Put the eggs, milk, apple puree and vanilla extract in a small bowl. Whisk well to combine.
Add the milk mixture to the almond mixture with the berries and mix until just combined. Divide the mixture evenly between the pans and smooth the surface. Bake for 25 mins or until a skewer inserted into the centre comes out clean. Set aside in the pan for 10 mins before transferring to a wire rack to cool.
Keep the friands in an airtight container in the fridge for up to 4 days.
