  • ¾ cup Chelsea Soft Brown Sugar
  • 1tsp Vanilla or essence of choice
  • 1-2 Tbsp Orange Juice
  • 1 ¼ cup Self Raising Flour
  • Zest of 1 large Orange
  • ⅔ cup Chocolate Chips, drops etc.

Method
Preheat oven to 190°C. Line two baking trays with baking paper or silicon sheets. Cream butter, sugar & vanilla (beat until pale and creamy). Add orange juice.
Sift flour and add into batter mixture along with orange zest. Fold in chocolate and roll mixture into approx. 24 balls and place on trays. Bake for approx. 12 mins until just golden.
TIPS: Please be careful as these cookies burn quickly.
I do not have a fan forced oven, so I find it better to swap trays around at the 6min mark to ensure even baking.
These cookies harden on standing, so will still be quite soft when taken out of oven.
The more sour the oranges the better for this recipe, so the cookie doesnt become too sweet.
