  • ½ tsp ground ginger
  • ¾ cup Chelsea Soft Brown Sugar
  • 125g butter, melted, cooled
  • ½ cup milk
  • 2 eggs, lightly beaten

CRUMBLE TOPPING

  • ¹/³ cup plain flour
  • 40g butter, chilled, chopped
  • 2 Tbsp Chelsea Soft Brown Sugar
  • 2 Tbsp Chelsea Coffee Crystals

Method
To gift, layer fruit mince, self-raising flour, ground cinnamon, mixed spice, ground ginger and brown sugar in a jar. Add tag.
To make muffins, preheat oven to 200°C. Put paper cases on an oven tray. Combine butter, milk and egg in a jug. Pour jar of ingredients into a bowl. Add butter mixture and stir until just combined. Spoon into cases.
To make crumble topping, put flour in a bowl and rub in butter until mixture resembles breadcrumbs. Stir in sugar. Spoon mixture over muffins, then sprinkle over coffee crystals. Bake for 15-20 minutes or until golden. Stand for 5 minutes, then transfer to a wire rack to cool. Serve.
