  • 1kg Potatoes, peeled and roughly chopped into bite size pieces.
  • 5 eggs
  • 125 grams cottage cheese
  • ½ cup grated cheese
  • 1 large tomato
  • ¼-½ cup of B.B.Q sauce
  • 1 tablespoon chilli sauce
  • ½ cup leftover chopped cooked chicken, sausages, salami, bacon, etc.
  • Salt and pepper

Method
Put chopped prepared potatoes in a pot and boil with water for approximately 8 minutes. Drain and cool. Preheat oven to 190C. Beat eggs, cottage cheese, and sauces together until well combined.
Cover the bottom of a baking dish, silicone is better, with the potatoes. Sprinkle the cooked chicken, or choice, over the potatoes. Beat eggs again and pour over potatoes and chicken. Slice thick slices of tomato and place over the top. Sprinkle grated cheese over all the pie, and a little salt and pepper. Place solid flat biscuit tray under dish for support. Bake in oven for 40-45 minutes until completely set and slightly browned on top. Serve in slices with leafy salad.
