  • 1 ½ cups flour
  • 250 gms margarine (melted)
  • 50 gms butter (melted)
  • grated zest of orange 
  • 1 cup orange juice
  • 2 ½ cups Chelsea White Sugar
  • 2 cups of milk (not cold) & ½ cups of milk for glaze
  • 3 cubes of fresh yeast
  • 4 egg yolks & one for glaze 
  • 5 egg whites

Method

Mix all the dry ingredients (flour, spices & zest) in a large bowl. Dissolve the 3 cubes of yeast in warm milk (2 cups). Add immediately to dry mix in a bowl, without waiting for it to rise. 

Mix the Chelsea White Sugar, 4 yolks & 1/2 cup of milk in mixer for 5 minutes. Blend all together in the bowl. Beating constantly, gradually add the butter/margarine mix. Finally add the orange juice. 

Cover the large bowl with a tea towel & place in an oven preheated to 80°C. Leave it for approximately 1 hour until it has well risen. Take out of the oven & divide into 6 dough portions. Place on baking paper on baking trays.

Cover with tea towel & leave for another hour to rise. Remove the tea towel, baste with yolk thinned with a little water. Bake in a pre-heated oven 180°c for 30 minutes.
