  • 3 thick strips of lemon rind
  • ¼ cup lemon juice
  • ¼ cup (60ml) water
  • 2 vanilla beans
  • 500g Chelsea Jam Setting Sugar

Method
Place a saucer in the freezer. Halve nectarines, remove stones and roughly chop. Use a vegetable peeler to peel 3 long strips of lemon peel. Combine nectarines, lemon juice, rind and water in a low-sided saucepan and simmer for 15 minutes or until tender.
Add jam setting sugar and scrape vanilla seeds from bean into saucepan, stir over medium heat for 1 minute until sugar has dissolved.
Bring to the boil and boil rapidly for 4 minutes (removing any scum with a large metal spoon).
Test a small amount of jam on the cold saucer (the surface should wrinkle when a spoon is pushed through it).
Ladle hot jam into sterilised jars and screw on lid to seal. Turn upside down for 5 minutes to draw a vacuum. Turn upright and set aside until cooled. Label, date and store in a cool, dark place. Refrigerate after opening.Makes: 2 x 200ml jars.
