Pudding

  • 2 cups high grade flour
  • ½ tsp salt
  • 2 tsp baking powder
  • 1½ cups Chelsea White Sugar
  • 4 Tbsp cocoa powder
  • 2 eggs
  • 1 cup milk
  • 4 Tbsp butter, melted
  • 1 tsp vanilla essence

Sauce

  • 4 Tbsp cocoa powder
  • 1½ cups Chelsea White Sugar
  • 1¾ cups boiling water

Method
Pudding : Mix all dry ingredients together.
Add beaten eggs, milk, melted butter and vanilla essence. Beat together well and place into greased dish.
Sauce : Mix together Chelsea White Sugar and cocoa and sprinkle it over mixture.
Carefully pour over the boiling water. (you can pour the water over the back of a spoon)
Cook in moderate oven (180°C) for 30 minutes or until done.
This is an old recipe of my late fathers who was a catering instructor in the NZ Army.
