Chocolate Cupcakes

  • 1 cup plain flour
  • 1 cup Chelsea White Sugar
  • 2 eggs
  • 100g melted butter
  • 2 tsp baking powder (heaped)
  • 3 Tbsp cocoa (heaped)
  • ½ cup milk
  • 1 tsp vanilla extract

Monster Faces

  • Desiccated coconut
  • Red or blue food colouring
  • Large white chocolate buttons
  • Small dark chocolate chips
  • Small amount of fondant icing
  • Orange and black food colouring
  • Cookies (optional)

Method
Preheat oven to 180°C. Line a 12 hole cupcake tin with cupcake cases.
Place all ingredients into a mixing bowl and mix until well combined. Spoon into prepared tin approximately two-thirds full. Bake for 15-20 mins or until they spring back when touched lightly or a skewer comes out cleanly. Cool cupcakes before icing with coloured buttercream icing.
Once iced, dip in coloured Monster "fur' (as below). Place eyes, nose and mouth on each monster as required.
Monster Fur: Pour desiccated coconut into a bowl and add a few drops of blue or red food colouring, mix well adding more drops until you get the desired colour.
Monster Eyes: Place large white chocolate buttons on a tray. Take small round dark chocolate chips and smear a bit of icing on the bottom of each before positioning onto the white chocolate buttons to create "eyes'.
Monster Nose: Roll a small amount of orange fondant in the palm of your hand to form an Elmo styled nose. Or we think a jaffa could work just as well!
Option 1 Monster Mouth: Roll out black fondant and cut out large circles with cookie cutters or a glass. Cut each of the circles in half to form a muppet mouth shape.
Option 2 Monster Mouth: Cut a mini chocolate chip cookie in half to stick on the top of the cupcake for a mouth.
