  • 1 vanilla bean, cut in half lengthways
  • 10g butter

Method
Place strawberries and Chelsea Jam Setting Sugar in a preserving pan or large heavy-based saucepan. Stir over low heat until sugar dissolves. Do not boil at this stage. Scrape the seeds from the vanilla bean and add to the mixture along with the butter. Increase the heat to medium-high and boil mixture for 4 minutes until jam reaches a setting point.
Remove the jam from the heat then test to see if it's set by spooning a little jam onto a chilled saucer. Run your finger through the jam and if it wrinkles then it's ready. If jam doesn't wrinkle then boil for another 2 minutes and test again. Retest at 2 minute intervals until setting point is reached.
Remove pan from heat and skim any foam from the surface.
Spoon into sterilised jars and seal well.
Makes 4 - 5 jars of 350ml.
