  • ½ Cup dark chocolate
  • 1 Cup plain flour
  • ¼ Cup cocoa powder, sifted
  • 1 Tsp baking soda
  • ½ Tsp salt
  • ½ Cup butter
  • ¾ Cup Chelsea White Sugar - optional
  • ⅓ Cup Chelsea Brown Sugar
  • 1 Tsp vanilla essence
  • 1 large egg, cold from the fridge
  • 2 Cups chocolate chips, add more if you prefer

Method
Preheat oven to 160°C : Melt dark chocolate in a saucepan or in a bowl in the microwave.
Put flour, cocoa, baking soda & salt into a bowl.
Cream butter and sugars together in another bowl.
Add melted chocolate to butter mixture & mix together
Beat in cold egg and vanilla essence.
Add dry ingredients to wet mixture, mix well.
Add chocolate chips and stir.
Place equal sized teaspoons of mixture onto a greased baking tray about 3cm apart.  Cook at 160°C for about 5 - 10 minutes.  Keep checking them until they're done to your liking.
I personally like them a little chewy but that's up to you & with some ovens they may cook faster than others so make sure you check very often to make sure they come out the way you like.
Take them out of the oven while still soft as they harden more while cooling.
