Ingredients

    1 cup dates, chopped
    3 Tbsp melted butter
    1 tsp baking powder
    4 weetbix, crushed
    1 cup Chelsea White Sugar
    1 egg, beaten
    1 cup self raising flour
    1 cup boiling water

Method

    Put all ingredients in bowl except egg, flour and boiling water. Add the boiling water, mix and stand for 5 minutes.
    Add beaten egg and flour.
    Mix well and pour into greased loaf tin.
    Bake for 40-45 minutes at 180°C; Leave in tin for about 10 minutes before turning out onto cooling rack.
    Serve sliced with or without butter.

Love this recipe, use it often, sometimes add a banana to it, everyone loves it

Made the loaf for the first time.Will certainly be making it again.Family loves it.

I have done this recipe a few times with a little added crystallized ginger. It's a firm favorite and handy in the cake tin this time of the year when expected and unexpected visitors arrive.

Easy, and yum.I use 1 tsp baking soda in the boiling water instead and add some chopped walnuts with the flour, cook, and then let cool completely,slice it really thin and serve it with blue cheese.
