This icing is great. Especially great when butter prices are so high in NZ, I used margarine instead of butter so it was easier to mix. If I could I would give this 11 stars. Thank you Chelsea sugar!!
Heat water and butter in a microwave on high for 30 second bursts until butter is melted.
Pour over sifted Chelsea Icing Sugar and add a couple of drops of food colouring to achieve your chosen colour. Whisk until smooth.
If you want thin, drizzling icing, ice cupcakes immediately or for a thicker consistency let icing sit for 5 minutes to thicken up before spreading over cupcakes.
