Base

  • 100 grams butter
  • ½ cup Chelsea White Sugar
  • 1 tsp vanilla
  • 1 cup flour
  • 1 cup dessicated coconut

Filling

  • 395 gram can condensed milk
  • 50 grams butter
  • 2 Tbsp Chelsea Golden Syrup

Topping

  • 1 cup thread coconut
  • ½ cup rolled oats
  • 50 grams butter, melted
  • 1 Tbsp Chelsea Golden Syrup

Method
Preheat oven to 180°C. Line a 23cm square tin with baking paper.
Cream butter and Chelsea White Sugar. Add vanilla, then sifted flour and coconut. Press into the tin and bake for 10-15 mins.
Put the filling ingredients into a saucepan and simmer on a low heat, while stirring for about 3-5 mins. Be careful not to burn the caramel.
Spread the hot caramel filling over the cooked base.
Combine topping ingredients together and sprinkle over the caramel filling. Bake a further 8-12 minutes or until golden.
When cold, cut into bars or squares.
