Crepes

  • ¾ cup plain flour
  • ¼ tsp salt
  • 2 eggs
  • 2 Tbsp oil
  • ¾ cup milk

Sauce

  • 50g butter
  • ½ cup Chelsea Soft Brown Sugar
  • ¾ cup orange juice
  • 1 Tbsp lemon juice
  • 2 to 3 oranges, peeled and sliced

Method
Crepes: Sift flour and salt together, beat in the eggs and oil. Add the milk gradually beating all the time until smooth. Stand 1 hour.
Heat crepe pan, grease lightly. Pour 2 to 3 tablespoons of batter into pan to coat base evenly. Cook until brown underneath. Toss or turn to brown other side, repeat with remaining batter. Stack crepes on a plate.
Sauce: Melt butter, add Chelsea Soft Brown Sugar and cook over a low heat until sugar caramelises. Pour in fruit juice, stir over high heat until liquid reduces slightly. Reduce heat. Add one crepe at a time, swirl around in the sauce. Using a spoon and fork, fold crepes in half then half again. Repeat with remaining crepes, add orange slices to pan, heat 1 minute and serve.
