  • 1 packet (225g) digestive or wine biscuits
  • 125g butter
  • ½ cup Chelsea White Sugar
  • 1 egg, lightly beaten with a fork
  • 2 Tbsp cocoa
  • 2 tsp mixed spice
  • 1 cup chopped nuts (walnuts, pecans, peanuts etc)
  • 1 cup sultanas
  • 1 tsp vanilla essence

Icing

  • 2 cups Chelsea Rich Chocolate Icing Sugar
  • 25g butter
  • 1-2 tsp hot water

Method
Line a 20 x 20cm square tin with baking paper.
Crush biscuits in food processor or place in a plastic bag, seal and crush with a rolling pin.
Melt butter in a large microwave proof bowl on high for 30-45 seconds. Stir in sugar and egg. Microwave 30 seconds, then continue to cook in bursts of 30 seconds, stirring in between unti mixture starts to boil.
Stir in cocoa, spice, nuts, sultanas, vanilla and biscuits crumbs. Press into prepared tin and chill.
Once chilled, ice with Chocolate Icing and allow to set before cutting into squares or bars.
Chocolate Icing: In a microwave jug or bowl heat butter and water on high for 30-40 seconds until butter is melted. Beat in chocolate Icing sugar until smooth - add extra if required
