Method
Cut cumquats in halves and remove pips. Tie pips in muslin bag.
Cut cumquats into thin slices and place in large bowl suitable for use in microwave. Add pips to bowl.
Bring water to the boil and pour over fruit in bowl. Leave to soak for one hour.
Remove bag of pips; add lemon juice.
Add Chelsea White Sugar and stir until dissolved. Continue to cook on high for about 40 to 50 mins, or until setting point is reached.
Stir in whisky and allow to stand for 5 minutes. Stir and ladle into warm, sterilised jars. Seal.
