  • ½ cup Chelsea Dark Cane Sugar
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 1 cup wholemeal flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon mixed spice
  • ½ cup chopped pitted dates
  • ½ cup chopped dried figs
  • ½ cup chopped dried apricots
  • ½ cup chopped walnuts

Method
Preheat oven to 180°C. Spray a 20 cm square cake tin with baking spray and line the base with non-stick baking paper.
Melt the butter in a medium saucepan or in the microwave, then stir in the dark cane sugar. Beat in the eggs and vanilla. Mix in all other ingredients. Spoon into the prepared tin and bake for 25 - 30 minutes until dark golden and springy when lightly touched. Cool in the tin and slice into squares. Dust with icing sugar to serve.
