  • 25g bran cereal
  • 225g Carrots, peeled and grated
  • 2 Eggs
  • 30ml Chelsea Golden Syrup
  • 150ml Vegetable Oil

Frosting

  • 50g butter, softened
  • 75g cream cheese
  • 1 cup Chelsea Icing Sugar

Method
Grease and base line a 2.5cm (8") round cake tin.
Mix together the flour, baking powder, cinnamon, Chelsea Soft Brown Sugar, bran cereal and carrot.
Beat together the eggs, Chelsea Golden Syrup and oil. Stir into the dry ingredients, beating well.
Spoon into the prepared tin. Bake in the oven at 180oC (350oF) mark 4 gas, for about 50 mins. Turn out on to a wire rack to cool.
Frosting: Mix together butter and cream cheese until creamy.
Beat in the Chelsea Icing Sugar.
Swirl over the cake and leave until set.
