  • 1½ cups pitted chopped dates
  • 1 tsp bicarbonate of soda
  • 75g unsalted butter, softened
  • 1 cup lightly packed Chelsea Soft Brown Sugar
  • 1 tbsp Chelsea Treacle
  • 1 tbsp self-raising flour
  • 1 cup (150g) self-raising flour, sifted
  • 2 x extra large eggs
  • Thick cream, to serve

Caramel Sauce

  • 300ml cream
  • ¾ cup Chelsea Soft Brown Sugar
  • 40g unsalted butter
  • 2 tbsps Chelsea Treacle

Method
Preheat oven to 180°C conventional or 160°C fan forced.
To make puddings, place dates in a pan with ¾ cup water and bring to the boil. Add bicarbonate of soda and set aside for 15 mins (it will bubble then subside).
Cream butter, Chelsea Soft Brown Sugar and Chelsea Treacle until pale brown. Add tablespoon of self raising flour, and stir to combine. Add eggs one at a time, beating until smooth. Use a metal spoon to gently fold in remaining flour and date mixture.
Lightly grease a 6-hole, ¾ cup capacity, non-stick muffin pan. Line bases with baking paper and spoon in pudding mixture. Bake for 20 - 25 mins or until skewer comes out clean. Set aside for 5 mins before turning out.
To make the sauce, combine all ingredients in a saucepan over low heat until butter has melted. Bring to boil and cook for 10 - 12 mins.
Pour over puddings.
