  • ½ cup Chelsea Golden Syrup
  • ¼ cup Chelsea Dark Cane Sugar
  • 2 tablespoons rum
  • 1 tablespoon each wholegrain mustard, sweet chilli sauce, soy sauce
  • 1 orange, zest and juice
  • 8-10kg ham
  • 30 whole cloves (approximately)

Method
Pre-heat the oven to 180ºC. Place all the ingredients except the cloves and ham in a bowl and mix together.
Place an 8-10kg ham into a large baking dish lined with baking paper. Remove the skin from the ham and score the fat in a diamond pattern. Press the cloves into the centre of each diamond.
Brush the ham generously with the glaze, using at least half. Bake the ham for approximately 40 minutes, brushing several times during cooking with the remaining glaze.
When the ham is golden remove from the oven and allow to cool slightly before serving.
