  • 2 tbsp light cream cheese
  • 1 tbsp Chelsea Icing Sugar, sifted
  • ¼ tsp vanilla extract
  • 2 tbsp Chelsea Icing Sugar
  • Red and green food coloring
Additional tips

You will need something to stick the apple pops into once made - try using a large apple or a piece of foam used for flower arranging covered with wrapping paper.

Method
Peel the apples and use a 2 ½ cm diameter melon baller to scoop balls out of the apples. Place in a small bowl and toss with the lemon juice.
Mix the cream cheese, icing sugar and vanilla extract in a small bowl. Place 1 tablespoon of the sugar in separate bowls. Add a few drops of red colouring to one bowl and another few drops of food colouring to the second bowl. Mix until well combined and the sugar is coloured.
When ready to serve, place a toothpick into each apple ball. Spread a little of the cream cheese over each apple. Sprinkle the red sugar over half of the apples and the green sugar over the other half. Serve immediately.
