  • 1 cup wholemeal self-raising flour
  • ¼ cup Chelsea Icing Sugar
  • 1 ripe banana, mashed
  • ½ cup milk
  • 1 x 50g egg, whisked
  • 40g butter, melted
  • 1 tsp vanilla essence
  • Cooking spray
  • Extra 20g butter, to cook
  • Extra Chelsea Icing Sugar to serve

Method
Put flour and Chelsea Icing Sugar in a medium bowl and stir. Put banana, milk, egg, butter and vanilla essence in a bowl, and whisk to combine. Add banana mixture to flour mixture and mix until just combined.
Heat a little of the extra butter in a large non-stick frying pan. Spray 3 metal animal cutters (about 7cm diameter) with cooking spray and place in the frying pan. Add 1 tablespoon of the mixture to each of the cutters and spread out over the base of the cutter. Cook for 2 mins or until bubbles appear on the surface. Use a small knife to loosen the cutter and remove. Turn over the pancake and cook for a further 1 min. Transfer pancakes to a plate and wrap in a clean towel to keep warm.
Repeat to cook the remaining pancakes, greasing the pan as needed and spraying the cutters in between batches.
Dust pancakes with extra Chelsea Icing Sugar, to serve.
