- 200g sweetened condensed milk
- 1 cup chopped dried apricots
- 1 x 250g packet of wine biscuits, crushed

- 100g butter, softened (or Olivani Spread)
- 1½ cups Chelsea Icing Sugar
- Grated zest and juice of 1 lemon
- 1 Tbsp hot water
- ¼ cup desiccated coconut (to decorate)

My Mum made this years ago when we where growing up also the others in the photo. When I got married I took her recipe's with me in a box. My husband got rid of the box in his clean up mood once. So even to this day I still let him know every so often on what he had done. So for these recipe's I thank you for bring my Mum back for a little while

Method
Grease a 20cm x 30cm sponge roll tin and line with baking paper.
In a medium-large saucepan heat the Tararua Butter, Chelsea Soft Brown Sugar and condensed milk until the butter has melted. Do not boil.
Remove from the heat and add chopped apricots and crushed biscuits. Mix well. Press mixture into the prepared tin. Refrigerate while you make the icing.
Lemon Icing
Beat Tararua Butter until pale and fluffy. Add Chelsea Icing Sugar and lemon zest, then beat in sufficient lemon juice and hot water so that you have a light, fluffy mixture. Spread over the slice and sprinkle with coconut. Set in refrigerator before cutting into squares.
