A great use of feijoas when they are so plentiful! Feijoa loaf is a moist, flavourful bake packed with the unique sweetness of feijoas. Lightly spiced and wonderfully soft, it’s delicious on its own or served warm with a spread of butter. A great way to make the most of feijoa season!

Method

Preheat oven to 180°C : Put feijoa pulp, water, sugar and butter in a pot bring to boil then simmer for 5mins. Set aside to cool.
Fold in flour, baking soda and egg. Mix together.
Pour in to a greased loaf tin.
Bake for 50mins or until skewer comes out clean.
